At the first bite of a pumpkin and gorgonzola brittle, Bruno Ceretto knew that he had finally found his chef. Together with the passion for wine and art, the Piedmontese entrepreneur was thinking about promoting his hills through the excellent cuisine of a restaurant.
The chef makes the restaurant, of course. But in the case of Piazza Duomo, it cannot be separated from the centuries-old charm of the location, as exceptional as the menu. The protagonist, in all its splendour, is the Piazza del Duomo in Alba city center.
If Enrico Crippa’s cuisine is a sensory journey, through time and space, the new menus interpret a double wish of the chef. On the one hand, to exalt the bond with the land and its history; on the other hand, to explore new frontiers of taste, in an ever-evolving creative synthesis that, while it always starts with seasonality and caring for the vegetable garden, is full of international influences.
Located a few kilometres from Alba, in the land of the Monsordo Bernardina Estate, belonging to the Ceretto family, the Piazza Duomo vegetable garden includes a greenhouse and a plot, where vegetables, herbs, and flowers that chef Enrico Crippa personally collects every morning are grown organically and biodynamically.
